We just made it through to Day Light Savings and the Spring Equinox! The upside : we will see the sun for longer periods in the evening. Downside : we live in Southwest Pa where historically the sun still hides a good portion of the year. A cozy sweatshirt helps as we maneuver through last stronghold months of what feels like winter but there is also a super power that citrus fruit has to offer us.

The winter often over depletes us of the Vitamin D required to keep all systems elevated. Mostly because our bodies are covered by hats, mittens and scarves any extra chance of being exposed to the sun diminished.

So where does citrus come in? March is the month many citrus peaks in tropical climates! Vitamin C & Vitamin D are so enriching for our bodies! Boosting our immune systems and our sun quenching thirsts!

We're talking sweet mandarines, blood oranges, grapefruit, kumquats... and my powerhouse fave to juice, freeze in ice trays and slice up for preserved fruits to use for cooking—LEMON! Preserved lemons serve an incredibly brightening component to soups, salads and smoothies!

Only five ingredients, making preserved lemons is an awesome activity with your littles you can begin and watch over time as they ferment with some very rewarding patience. 

You'll need a bag of (highly recommend organic meyer) lemons, sugar, kosher salt, water, peppercorn, bay leaves, water and a large pickling jar.
